Ingredients:

  • 1 cup green lentils
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 1 medium celery stalk, sliced
  • 1 teaspoon ground cumin
  • 1 bay leaf
  • Salt and pepper to taste
  • 4 cups vegetable broth or water
  • Lemon juice (optional)

To begin with, soak the lentils in cold water for at least two hours. This step helps soften the lentils and enhances their texture when cooked. Drain well before proceeding.

In a large pot, heat olive oil over medium heat until shimmering but not smoking. Add chopped onions and cook them gently until they become translucent. Then add minced garlic and sauté for about one minute to release its aromatic flavors without burning it. Next, stir in diced carrots and celery, continuing to cook the mixture until all vegetables are softened.

Now, sprinkle ground cumin into the pot along with bay leaf. Allow these ingredients to infuse their flavors into the soup base by cooking for another two minutes. Pour in soaked lentils and 4 cups of vegetable broth or water depending on how thick you want your final soup consistency to be. Stir everything together thoroughly.

Bring this mixture to a boil, then reduce heat to low setting. Simmer gently while partially covered lid is placed over the pot, ensuring that steam doesn't escape too quickly. It will take around 30 minutes for the lentils to become tender enough to blend smoothly into the soup without breaking apart entirely.

Once the lentils are soft, remove the bay leaf and optionally squeeze in some lemon juice if you prefer a slightly tangy taste. Adjust seasoning by adding salt and pepper according to personal preference.

This vegan lentil soup can be served hot with crusty bread or rice for additional carbs. It makes an excellent meal starter before moving onto heavier main dishes later on during dinner service time.
