Ingredients
- 1 box of uncooked lasagna noodles (usually 9 pieces)
- 4 cups ricotta cheese (or cottage cheese as a healthier alternative)
- 3 eggs, beaten
- 1 cup shredded mozzarella cheese, divided (reserve some for the top layer)
- 1 cup grated Parmesan cheese
- 1 jar of your preferred tomato sauce or marinara
- 2 cloves garlic, minced finely
- Salt and pepper to taste
- Optional: fresh basil leaves, oregano, red pepper flakes for added flavor (optional)
Preparation Steps
To start off, preheat your oven to 375°F. Prepare a baking dish that is at least 9x13 inches and generously grease it with olive oil or use parchment paper.
Begin by cooking the uncooked lasagna noodles as per package instructions until they become al dente (firm but not hard). Drain them well to prevent water from mixing in with your other ingredients. This is a crucial step since excess liquid could cause the layers of the lasagna to fall apart during baking.
In a large bowl, mix together ricotta cheese and beaten eggs until smooth. Stir in 1 cup of shredded mozzarella along with Parmesan, salt, pepper, garlic, and any additional herbs you might like. Taste the mixture for seasoning - feel free to add more spices according to your personal preference.
For assembly, spread a thin layer of tomato sauce on the bottom of your prepared baking dish. Layer two pieces of cooked pasta over it. Spread half of the ricotta cheese mixture evenly across this layer of noodles. Top off with another 1/3 cup mozzarella and sprinkle some basil if you wish.
Repeat these steps twice more; spread another thin layer of sauce, add a second pair of lasagna sheets, apply more filling, then finish it up with the last sheet of pasta and top everything with remaining mozzarella. Cover this entire structure with foil before placing into preheated oven.
Bake for about 40 minutes until fully heated through and the cheese on top starts to turn golden brown. Remove from heat immediately after cooking time ends so that all parts of the lasagna can set properly without overcooking. Let it sit aside at room temperature for about 15-20 minutes before cutting into slices.
