- 3 tablespoons tomato paste

- 1 ½ cups ricotta cheese
- 3 large eggs, beaten
- 3/4 cup grated Parmesan cheese, divided use
- Salt and pepper to taste
- Variety of vegetables: spinach, mushrooms, bell peppers, and zucchini
- 1 ½ cups shredded mozzarella cheese (for topping)
Instructions
Step 1: Prepare the Pasta Layers
- Cook lasagna noodles according to package instructions. Drain and set aside.
- While pasta is cooking, preheat your oven to 375°F (190°C).
Step 2: Make the Sauce
- In a large saucepan over medium heat, add olive oil. Sauté garlic and onions until they are soft.
- Add dried basil, oregano, tomato paste, sugar (if needed to balance acidity), and crushed tomatoes into the pan. Stir everything together well. Let it simmer for about 15 minutes, stirring occasionally to prevent sticking on the bottom of the pot.
Step 3: Prepare the Filling
- In a bowl, mix ricotta cheese with three beaten eggs and half of the Parmesan cheese. Season with salt and pepper.
- Finely chop vegetables such as spinach, mushrooms, bell peppers, and zucchini into small pieces and add them to the ricotta mixture for extra flavor.
Step 4: Assemble the Lasagna
- Spread a layer of sauce on the bottom of your lasagna dish (use about one-third of the total sauce).
- Lay two sheets of cooked pasta over the sauce, cover with half the vegetable-ricotta filling.
- Add another layer of sauce and sprinkle over ½ cup mozzarella cheese. Repeat this process three times for a total of four layers.
- Finish by placing the remaining lasagna noodles on top followed by an even layer of tomato sauce, Parmesan cheese, and a final sprinkling of mozzarella.
Step 5: Baking the Lasagna
- Cover with aluminum foil and bake in preheated oven for approximately one hour. Remove foil during the last thirty minutes to allow the top to brown slightly.
- To check if it's done, insert a toothpick into the center of the lasagna; it should come out clean. Let it cool down for at least 30 minutes before slicing and serving hot.
