Recipe 1: Vegetarian Stir-Fried Noodles with Garlic and Green Onion

- Cook the rice noodles according to package instructions until soft. Drain and set aside.
- Heat a large skillet or wok over medium-high heat. Add 2 tablespoons of vegetable oil. Once hot, add finely sliced carrots and bell peppers. Stir-fry for 3-4 minutes until they are slightly softened but still crisp.
- Add sliced onions and stir-fry another minute. Pour in the cooked noodles and mix well to incorporate all vegetables with the noodle strands.
- Reduce heat to low, add soy sauce, minced garlic, and green onions. Stir gently to combine flavors without overmixing.

Recipe 2: Beef Stir-Fry with Vegetables

- Cut beef into thin strips, season with salt and pepper. Marinate in soy sauce for at least 10 minutes.
- While marinating the beef, prepare other ingredients by washing and slicing carrots, bell peppers, and onions as before.
- In a large bowl, combine all prepared vegetables along with green onions. Set aside.
- Heat up your wok or skillet until very hot. Add 1 tablespoon of vegetable oil, then add the beef strips to the pan. Stir-fry for about 2-3 minutes until golden brown and cooked through. Remove from heat.

- Firm tofu cut into cubes. Press out excess water by pressing between paper towels.
- In a large pot, bring water to boil for boiling the beans and noodles as per package directions (if any).
- For the sauce, mix soy sauce, garlic paste or powder, black pepper, and a splash of sesame oil in small bowl. Keep aside.
- Heat up your wok or skillet until very hot. Add 2 tablespoons vegetable oil followed by the tofu pieces into the pan; stir-fry for about 3 minutes until lightly browned on all sides. Remove from heat.
- Add in the prepared vegetables like bell peppers, carrots, and onions which you have sliced earlier. Stir-fry these along with garlic clove and scallion pieces added towards end of cooking process. Return tofu back into skillet with the soy sauce mixture; stir gently to coat everything evenly.
