To prepare this dish, you’ll need approximately 20 minutes of cooking time to make enough for 4 servings.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized strips
- 3 tablespoons soy sauce (use tamari for a gluten-free option)
- 1 teaspoon sesame oil
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, peeled and grated
- 2 cups stir-fry vegetables such as broccoli, bell peppers, carrots, and snap peas (your choice!)
- 2 tablespoons cornstarch mixed with 4 tablespoons water to make a sauce
- Salt and pepper to taste
- Vegetable oil for stir-frying
Instructions
Begin by preparing your chicken. Slice the chicken breasts into thin strips, about ½ inch wide. Place the chicken in a bowl and add soy sauce, sesame oil, garlic, and ginger. Stir until the chicken is well coated and let it marinate for at least 15 minutes.
While the chicken is marinating, prepare your stir-fry vegetables. Cut all veggies into similar sizes so they cook evenly together in the stir-fry. Rinse them thoroughly with water to remove any dirt or impurities.
In a small bowl, mix cornstarch and water until smooth. This mixture will act as a thickener for your sauce when it is added at the end of cooking.
Cooking Process
Heat up a large wok or a deep skillet over medium-high heat. Add some vegetable oil to coat the surface lightly. Once hot, add the marinated chicken and stir-fry for about 3-4 minutes until no longer pink in color inside.
